mini vanilla wafer cheese cakes always make me smile


These little Cheese Cakes make me smile every time I make them. I don't know if it because they are so tiny and cute or that they are so easy to make and portion controlled. The Cheese Cake Factory opened a few weeks ago near us and I have been craving Cheese Cake for days. The problem is that the Restaurant is Packed still with a large waiting list to get in and the portions are huge for a girl who is trying to loose a bit of mommy fat. So for those of you who like Cheesecake in small doses or would like to share something wonderful and new with friends to make them smile, then try these.





Mini Vanilla Wafer Cheese Cake Recipe

makes 12 


12 vanilla wafer cookies

2 (8 oz) packages of cream cheese

1/2 cup Powdered sugar

1 tsp. vanilla extract

2 eggs

1 can blueberry or cherry pie filling

12 foil muffin cups


Put foil muffin cups in the bottoms of a 12 cup muffin tray. Place a vanilla wafer cookie in the bottom of each cup. In a mixing bowl, mix the cream cheese, vanilla and powdered sugar until well blended. Add eggs and mix well again. Pour over wafers and fill 3/4 the way full. Bake at 325 degrees for 25 min. Chill and top with a spoonful of blueberry or cherry  pie filling. Enjoy and share this sweet treat with some good friends!
